Apple Ginger Mule
Ingredients:
4 pieces muddled sweet apple chunks
1½ oz Aviation Gin
¾ oz freshly pressed lime juice
1 oz simple syrup
2 oz ginger beer
Method: In a pint glass, muddle the apple chunks. Add spirits and mixers (through ginger beer). Fill with ice. Shake vigorously. Strain into ice filled collins glass. Top with ginger beer. Garnish with sliced apple.
Patrón Mojito
Ingredients:
1.5 oz. Patrón Silver
1 cut lime
1 oz. simple syrup
Club soda
6-8 fresh mint leaves
Lime wedge for garnish
Method: In a tall glass, muddle mint leaves, lime, and simple syrup. Add a cup of ice and Patrón Silver, and top with club soda. Stir gently. Garnish with a lime wedge.
Queens Park Swizzle
Ingredients:
2 parts Sailor Jerry Spiced Rum
1 part lime juice
1 part soda water
1 /2 part simple syrup
6-8 mint leaves
2 dashes house bitters
Method: Add all ingredients to a highball or catalina glass and fill with crushed ice. Stir, or swizzle, until glass is frosted, and garnish with a mint sprig and a further dash of house bitters. Place a swizzle stick (or a barspoon) between your palms and run your hands back and forth, stirring or 'swizzling' the drink.
Strawberry-Basil Cointreau Rickey
Ingredients:
7.5 oz. Cointreau
3.75 oz. fresh lime juice, strained
20 oz. cold water, filtered
1 Strawberry, hulled and quartered (in each glass)
2-3 Basil Leaves (in each glass)
Method: Place 1 strawberry, hulled and quartered and 2-3 basil leaves in the bottom of each highball glass. Muddle the ingredients in each glass. Pour the carbonated mixture into the glass with ice. Stir briefly. Garnish with a strawberry and basil leaf.
Sunny Weather
Ingredients:
8 oz. chilled Ruffino Prosecco
1.5 oz. grapefruit Juice
.5 oz. St. Germain Elderflower liqueur
.25 oz. Campari
Method: Pour Ruffino Prosecco over ice in a collins glass until halfway full. Add grapefruit juice, St. Germain, and Campari. Top off with more Ruffino Prosecco as needed. Garnish with a grapefruit twist.
Palomita
Ingredients:
7.5 oz. Cointreau
2.5 oz. fresh lime juice, fine strained
15 oz. fresh grapefruit juice, fine-strained
6.25 oz. filtered water
Method: Prepare batch in a large container and funnel into a siphon. Charge with CO2 and keep on ice or in a refrigerator. Serve over ice in a tall glass. Garnish with a grapefruit twist.
Kappa Grapefruit Fizz
Ingredients:
1 ½ oz. Kappa Pisco
3 oz. grapefruit juice
1 oz. bottled soda water (or lemon lime soda)
Method: Pour Kappa Pisco and grapefruit juice into an ice filled highball glass. Top with soda water (or lemon lime soda) and garnish with a lime wedge.
Eastman's Riot
Ingredients:
2 oz. Jameson
1/2 oz. lemon juice
1/2 oz. ginger syrup
1/2 oz. Mionetto Organic Prosecco
1 oz. ginger ale
Lemon wedge
Method: Combine Jameson, lemon juice, ginger syrup in cocktail glass filled with ice and stir. Add ginger ale and top off with Prosecco float. Garnish with lemon wedge.
The drink is named after Monk Eastman who was an Irish gangster in New York back in the late 19th/ early 20th centuries.

Hakushu Highball
Ingredients:
1 part Hakushu Whisky
4 parts Sparkling water
Sprig of Mint
Method: Pour Hakushu Whisky over ice. Top with sparkling water. Garnish with a sprig of mint.
Sparkling Sangria Rosa
Ingredients:
1 whole strawberry
1 pineapple cube
1 ½ oz. Sobieski Raspberry
½ oz. simple syrup
½ oz. lime juice
1 ½ oz. Rosa Regale
1 oz. soda
Pineapple leaf (for garnish)
Method: Muddle strawberry and pineapple. Shake Sobieski raspberry, simple syrup, and lime juice with ice. Top with Rosa Regale and soda. Swirl and strain into a 14 oz. glass over ice. Garnish with pineapple and skewered strawberry and pineapple.

Hot Fun in the Summertime
Ingredients:
1 ½ oz. Aviation American Gin
1 teaspoon orange marmalade
1 oz. freshly pressed lemon juice
3 dashes Scrappy's lavender bitters
½ oz. egg white
1 ½ oz. soda water
Fresh lavender flower
Method: In a mixing glass, add all ingredients through egg white. Shake vigorously with no ice. Add ice and re-shake for 30 seconds. Fine strain into a small juice glass. Top with soda water. Garnish with a fresh lavender flower.
