Owner Joe Kim is one of two technically trained Cordon Bleu graduates running this deliciously pork-centric truck. Marketed as high-end street food that marries French technique with Asian and Pacific Rim flavors, Kim started the truck as a testing ground for a similarly themed brick-and-mortar restaurant that he has since opened in Little Tokyo. While everything these guys turn out is heavenly, we're partial to the Braised Pork Belly Buns with red onion, escabeche and sesame-cucumber sauce ($3); Tamarind Duck Tacos with toasted almonds and a pickled beet salad ($3); and Crab Balls with a cilantro-lime chimichurri sauce ($2). We were licking the "death sauce" off our fingers and savoring the pork bits stuck in our teeth for the entire day after our visit.
