Come next week, Meltkraft (442 9th St.) will set up shop in Brooklyn's Park Slope neighborhood. The grilled cheese expert originated in Philadelphia, and will soon inhabit what used to be Almondine on 9th Street. As with the flagship location, this Meltkraft will offer seven different grilled cheese sandwiches with cheese from the Valley Shepherd Creamery in New Jersey.
The runaway hit looks to be the Valley Thunder (seen above), which combines Bubbe's brisket and baked macaroni and cheese with cheddar aged for a year. It's a little kid's Thanksgiving dream of a meal, grilled to perfection. Also, if you want to pony up a few extra dollars, they'll grill your sandwich in bacon or duck fat.
