Not a restaurant as such, but New York's best new bakery deserves a place on this list. Zachary Golper learned the trade in the wilds of Oregon and went on to steward the bread program at Philly's Le Bec Fin. His slow-fermented loaves here are bonkers: Each tangy miche, baguette, or fougasse feels ancient and sexy. But it's the sweet stuff that really shines—a lemon tartlette with torched dots of meringue, or buttery danishes filled with yam and maple. Crazy.—JR
