The envelope-pushingAlinea Restaurant(1723 North Halsted St.) in Chicago, named one of the best restaurants in the world by Restaurant magazine in 2010, added a new dessert to the menu: edible helium balloons.

The balloon is made of sugar; the string, also edible, is flavored with green apple. It's served with a pin if the customer would rather pop the treat. In the video below you can watch someone eat it by diving in, mouth first.
