In a haute twist on the French ham and cheese sandwich, L.A. chef Quinn Hatfield ditched the gruyere in favor of yellowtail sashimi, piled on prosciutto in place of regular ham, and topped the whole thing off with a sunny side up quail egg. Seussical, yet savory. We can get behind that.
