They are so committed to detail that Smoque has written a BBQ Manifesto that talks about why the “meat not the sauce should be the star of the show.”
Everything about Smoque is detail-oriented and entirely legit. They smoke their pork shoulders for twelve hours; they smoke their moist brisket for fifteen hours. They’ve got pink and plump yardbirds that get smoked for three hours and Memphis-style dry-rubbed ribs cooked over oak and sweet applewood.
