According to the Swedish National Food Agency, beaver waste could help make baked goods smell glorious. This is because their anal secretions apparently smell like vanilla. How hilariously ironic:
Natural aromas can be extracts from plants, fungi, and in some cases animals. The labelling provisions do not require that the kind of flavour is indicated, with the exception of coffee and quinine
Beavers reportedly create the scent to mark their territory. How funny is it that the same odor they generate to keep people away is strangely inviting? Like, inviting enough to put in your mouth. The anal extract, used as a castoreum, can also be used for medicine and in perfumes like Givenchy III.
Have fun eating anything vanilla-flavored for a while.
