If you can separate ramen from those struggle days of college, you'll find that it's actually delicious. Still, the broth is pretty fattening. To remedy this, seafood supplier Yuji Haraguchi created Yuji Ramen, a Williamsburg pop-up located in the back of Kinfolk Studios.

Operating Thursday through Sunday from 7 p.m. to whenever, the place features broth-free ramen that's perfect for warmer weather. Haraguchi, tired of American ramen noodles getting soggy after soaking in broth for too long, took the liquid out of the equation. For added value (and decoration), each bowl is topped with fresh seafood.

The menu, with prices ranging from $7 and $12, changes frequently. Fall through for a lighter and more festive bowl of ramen.
