B.R. Rolya Says: "The tiny Theillier brewery, housed in a building dating back to 1670 that was built on Roman foundations, makes a rustic bière de garde from 100 percent pilsner malt. But because of a long boil in a direct-fired copper kettle, the beer is not blonde, but rather a rich amber color from the caramelization of the wort. While predominantly malty with toffee notes, it also has some spice in the aroma and flavor, a hint of earthiness, and balanced bitterness. It evolves in the glass, giving off flavors of dark fruit as it warms."
