What does pisco mean?

Pisco is an Incan word meaning small bird. There is a valley, a river, a town, and a port in Peru all bearing that name. The spirit was originally shipped from that port, so the name is like Champagne or Cognac. The spirit has been made in Peru since the late 1500s. It's not a new product, it's not as if someone has just invented a new spirit. But the problem is, the little pisco that was coming to the States was a lower-priced product. In the last few years, that has changed. Higher quality piscos are now available outside of Peru.
