Less than 30 percent of rice kernel polished away
Lower-grade sake rice is lightly polished, leaving 70 percent or more of the original rice kernel. The sake that comes out is labeled futsu-shu, or “table sake.” It’s fine to drink but is typically ordered as “hot” or “cold” instead of by name. This is the Coors Light of sake.
