SMOKY BACON BUTTER
“At big family dinners, there’s always a dish that’s terrible. Shave this over anything from hot vegetables to ice cream and it’ll make it taste better. You save the day and everyone loves you.”

1 lb. unsalted butter (room temperature)
1 lb. bacon
4 cloves minced garlic
1 shallot minced
1 oz. pure maple syrup
1/2 bunch sage
2 tsp. chipotle pepper powder
1 oz. sherry wine vinegar


Cut bacon into small pieces and slowly cook in a pan until all fat is
rendered and bacon bits are crispy. Set aside and cool. Place all ingredients in a food processor, including the bacon with the fat, and blend until mixture is homogenous, not smooth. Roll into plastic wrap and form to look like a tube of cookie dough. Freeze and shave over your favorite dishes with a microplane grater. Butter-baconriffic!
