Chicken Galantine with Pommes Purée and Pickled Carrots

SKIN whole chicken. GRING meat. ADD sliced onion, 2 minced garlic cloves, salt. ROLL meat up inside skin. TIGHTEN in plastic wrap until airtight, TIE ends. PLACE into barely simmering water for 10 minutes. REMOVE, COOL; STRIP plastic, PLACE in medium-heat pan with oil. BROWN all sides. BAKE 3 Idaho potatoes at 350 degrees until tender. SCOOP potatoes from skin and MILL into 1 cup boiling milk. MIX in 1/4 lb. butter and 3 tbs. olive oil until smooth. SEASON with salt. BRING vinegars (¼ cup rice, ½ cup white wine) to boil with 2 tbs. sugar, salt, pinch of red pepper flakes. POUR over cup diced carrots in container and let sit 1 hour until cool.
